Apple Harvest Squares

Lana Vining of Charlotte shared this recipe with me in 1975 during the sesquicentennial (150 years) celebration of the town of Charlotte, Maine.  The Charlotte Cooks' Book, published that year, has the most wonderful recipes and Apple Harvest Squares is one of my favorites.

Sift together:

1 ½ cup flour
cup sugar
¾ tsp. salt

Cut in:

½ cup butter until particles are fine

Press into the bottom of a 9" x 13" pan.  Arrange four cups pared and sliced apples over base.  Sprinkle with 2 Tbsp. lemon juice.

Combine:

cup sugar
1 tsp. cinnamon

Sprinkle over apples and bake at 375° for 20 minutes.

Combine:

1 cups flaked coconut
cup evaporated milk
1 egg
½ cup sugar
¾ cup chopped walnuts
1 tsp. vanilla

Spoon over partially-baked apples and return to 375° oven for an additional 25-30 minutes.
