Maple Pecan Squares

Crust:

1¼ C flour

C sugar

½ C butter (1 stick), softened

To make crust:  Preheat oven to 375°. Grease an 8" x8" pan. Combine flour and sugar in bowl. Cut in butter and blend until mixture resembles coarse crumbs.  Press mixture into bottom of pan.  Bake for 15 min. and set aside.  Reduce heat to 350°.

 

Topping:

¾ C maple syrup

C sugar

2 eggs

2 Tbsp butter, melted

1½ tsp vanilla

2 Tbsp flour

¼ tsp salt

1 C pecans, chopped

To make topping:  In a bowl, combine all ingredients. except pecans.  Beat well and stir in nuts.  Pour mixture over crust and bake for 40 minutes or until firm in middle. Cool and cut into squares.  I doubled my batch and put it in a 9" x 13" pan for the same time.  Keep a watch on the time because they may be done sooner or may take longer to cook.
